
four months is a long time to go without some family lovin', so when gina stopped in london for 24 hours on her way back to calgary, i was one happy girl. i couldn't stop hugging her.
in 24 hours, we shopped, ate amzing nigerian food at camden market, met up with my flatmate and her brother, watched a movie, and got eachother all caught up on the gossip. she brought me pics of the kids, isabell and dave, and the mamma...i saw a pic of my aunty teresa and it was good to see her on film. she's not doing so well and i would love to be able to see her at christmas.
in 24 hours, she helped take away a miserable june.
she gets it. she has been where i am...at the wall. you know when runners hit the wall...not quite sure if they can go forward or not. the psychological barrier that determines whether you pack up your bags and high tail it home, or if you get over it and move forward. thanks g.
i got all retro when she got here so i made a retro meal...something i'd have at home and glad i did it. time to get back on that wagon. fish in orange parsley sauce (enjoy the recipe below)
Fish Fillets with Orange Parsley Sauce
4 white fish fillets
flour
1/4 cup olive oil
40g butter
1 red spanish onion, finely chopped
1 tbsp white vinegar
1 tbsp drained capers
1 tbsp grated orange rind
1/3 cup orange juice
80g butter, extra
1 tbsp chopped fresh parsley
Toss fish in flour, shake away excess flour. Heat oil in pan, add fish, cook until tender. Remove from pan and keep warm.
Heat butter in clean pan, add onions, cook, stirring, until onion is soft. Add vinegar, capers, rind and juice, stir over heat until boiling, remove from heat. Whisk in extra butter, stir in parsley. Serve orange parsley sauce with fish.
this weekend was also the weekend of our come dine with me, where five of us get together to see who makes the best meal. but looking at the group of us, we're probably just happy to have five amazing meals out. ha ha
that being said, my killer menu is now laid out. i am to win. :)
